Buryat bouzas (poses)
Taking into account the different cultures of modern Russia, as well as its many traditions, culinary ones cannot be ignored. One of them can rightfully be considered a popular dish of national Buryat cuisine in the Trans-Baikal Territory called poses or buuzes.
It is generally believed that the name buuza comes from the Chinese dish baozi, which is not surprising even for those who are not experts in oriental languages. At the same time, it is known that in Russian the word buzzy translates as meat wrapped in dough. The history of the origin of Buryat food is shrouded in mystery and goes back to ancient times. It is only known that the poses were traditionally prepared for big holidays and events, and important guests were greeted and fed with them. According to legend, the poses were sculpted in the form of a national Buryat dwelling – a yurt. The dish was served on long trays, placed in the middle of the table and enjoyed the excellent taste and aroma. Buryats eat buuz exclusively with their hands, biting into the bottom of the dough so that through the formed hole you can drink the juice that has accumulated during cooking.
Bouzes, or as they are also called poses, are an analogue of Caucasian khinkali, but they differ fundamentally in the form of modeling, which is more similar to mantas. The meat for the filling (usually lamb meat) is chopped or ground through large holes in a meat grinder. Finely chopped inner fat, flour, onion, spices and water are added to it. The dough is prepared according to the recipe of homemade noodles, rolled out in the form of a round bundle and cut into bars, which form into thin circles. After that, minced meat is put on them and cup-shaped poses are molded with a small hole on top for steam to escape. As a rule, it takes 17-20 minutes to prepare steamed poses in a special steamer. In diameter, the finished dish unit has a size from 5 to 7 cm.
Every year, the city of Ulan-Ude hosts a Festival of folk traditions and the main theme is poses, as well as contests related to them. According to the rules of one of the competitions, the poses are tasted and the most delicious winner is chosen. In another competition, city records are set for the number of cooked and eaten bouzas. In 2018, a local chef surprised the audience by creating a mini-buza measuring only three millimeters and even managed to stuff it with minced meat. For the veracity of the experiment, the buza was even cut in half to make sure that it contained minced meat. Other participants also tried their best, but the size turned out to be 4 millimeters.
